Questions about scaling

How do you scale a recipe up or down?

Divide the servings you want by the servings the recipe makes, then multiply every quantity by that number. Doubling a recipe that serves 4 to serve 8 means a factor of 2. Quantities that aren't numbers — salt to taste, a handful of parsley — don't scale; season to taste as you go.

Does everything in a recipe scale evenly?

Ingredients do. Times and equipment don't. A cake batter doubled needs a bigger tin or two tins, not double the baking time, and a pan crowded with twice the meat will steam rather than brown. Leaveners, salt and strong spices are usually worth scaling slightly under, then adjusting at the end.

How many grams is a cup?

It depends entirely on what's in the cup. A cup of water is 240 g, a cup of all-purpose flour is about 120 g, granulated sugar is 200 g, and packed brown sugar is 220 g. That's why weighing is more reliable than measuring by volume — a cup of flour can vary by 20% depending on how it was scooped.

Why can't some ingredients be converted to grams?

Weight conversion needs a density. We have densities for common baking and cooking ingredients, so cups of flour, sugar, butter or milk convert cleanly. A cup of chopped celery or two cloves of garlic have no meaningful single weight, so those keep their original measurement rather than showing an invented number.
